From quintessential English preserves to relish for rock'n burgers, chutneys for cheese and ingredients for the Bake Off generation.
Having grown up making delicious preserves with her mother, Emma Macdonald, has always had an obsession for food and the pursuit of taste. This passion for discovering exciting and innovative flavours saw her travel the world as a chef, before launching The Bay Tree.
The early days were humble, with Emma lovingly creating batches of Aga dried tomatoes and Cucumber Relish in her mother’s kitchen. Within days of launching Fortnum & Mason and Harvey Nichols were keen to place orders and the kitchen was quickly outgrown.
Emma moved The Bay Tree to its first manufacturing unit, where she continued developing new ranges and exploring new flavour profiles. And they have been in their current manufacturing home since 2012 after outgrowing the last premises.
Right from the very start, Emma married traditional cooking methods with innovative flavours. Her company still has a passion for tradition but their inherent sense of adventure continues to push them, to fully explore many conceivable flavours - only ever bringing you something that they are truly proud of.
These values are still central to their philosophy today; they call it making the ordinary extraordinary.
Emma has now written two cookery books, Home Deli Recipes and Preserving to share her deep, deep love of food with home cooks worldwide.
She believes that taste is one of life’s greatest pleasures. Quite simply, food that tastes great makes life feel better. Her goal is simple - to make the wonder of nature’s finest flavours a part of everyday life.
